Almond Butter Granola

Makes 4 cups

I made this granola for my cookbook signing and it was such a hit that I thought I would share it on the blog!
This is so easy and delicious to make, I think it might become your favorite breakfast ever (I know it is mine) ! Even my kids love this!

Ingredients

  • 3 cups of oats
  • 5 tbsp of almond butter (I have tried it with crunchy and creamy and both work)
  • 4 tbsp of maple syrup (or honey)
  • 1 tsp of vanilla extract
  • 1 cup of raw almonds ( I leave mine whole but you can chop them)
  • 1 pinch of salt
  • 1/2 tsp of cinnamon

Directions

Preheat oven to 325 degrees and spray a cooking sheet with coconut oil spray. Combine almond butter and maple syrup in a small pan and melt on low, stirring until combined
( microwave also works if you want to go faster).
Stir cinnamon, vanilla and salt into the almond butter and maple syrup mixture. Add oats and almonds and stir until all ingredients are covered evenly.
Spread oat mixture onto cookie sheet and bake for 20-25 minutes, or until granola is slightly browned.  Make sure you watch it very closely, as it can burn fairly easily. You can stir with a spoon halfway.
Remove from oven and allow to cool completely until granola is crunchy.

Feel free to add any dried fruits, I like sometimes to mix it up and add cranberries and coconut. Basically any dried fruits and nuts could work here!
