Cauliflower Miso Soup

The balance of the cauliflower and the miso in this recipe is absolutely divine!! I also added some fresh ginger to give it a nice kick and extra flavor!

Ingredients

  • 1 head of cauliflower, washed and cut into florets
  • 1 tbsp of fresh grated ginger
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4-5 cups of veggie stock ( or water is good as well)
  • 4-5 tbsp of white miso
  • Salt and pepper to taste
  • Toppings, roasted cauliflowers bits or crispy quinoa
  • 2 tbsp of olive oil

Directions

Sauté the onion, ginger and garlic with olive oil for 5-7 minutes. Add the washed cauliflower and the stock. Bring to a boil, lower to medium and cook for 10-15 minutes until veggies are really tender and cooked through.

Transfer to blender and purée until smooth. Transfer back to the pot and add the miso when liquid is still hot ( but not boiling hot otherwise you kill all the good bacteria of the miso paste) and mix until dissolved.

Add some salt and pepper to taste and enjoy!
