Cauliflower Shepherd Pie

This is a different version of a traditional shepherd pie and I like its light texture. I think the cauliflower purée gives it a nice and smooth texture, plus it is always fun to mix it up... Feel free to use different meats and veggies, you cannot go wrong!

Ingredients

  • Cauliflower puree (see recipe on blog)
  • 1 lb of ground turkey (mix of white and dark meat and even turkey sausage meat)
  • 1 cup of peas, (frozen, thawed)
  • 1 cup of brocoli (frozen, thawed)
  • 1 cup of corn (frozen, thawed)
  • 1 shallot minced
  • salt and pepper

Directions

Sauté the shallot with some grapeseed oil for 2-3 minutes and add the meat. Add some salt and pepper and place into a baking dish when cooked all the way through. Add the veggies layer on top of it.
Finish the shepherd pie with the layer of the mash cauliflower.
The dish can be prepared up to one day in advance and reheated when needed, for 25-30 minutes at 375 degrees. It can also easily be frozen.
