I have such a sweet tooth and am a chocolate lover that sometimes it gets me in trouble. I am always on the look for healthier dessert but it MUST taste amazing, otherwise it is not worth! This one is a winner for sure!
Preheat the oven at 350F. Grease and line and 8 inch spring from cake pan.
In a large bowl combine the dry ingredients together. In a medium bowl whisk together the eggs, melted butter (must be at room temperature to avoid making scrambled eggs) and maple syrup.
Fold in the wet ingredients with the dry until just combined, do not over mix.
Spoon the mixture into the cake pan and bake for 35-40 minutes, until an inserted pick comes out clean,
Let the cake cool for a few minutes before removing from the pan and assembling.
Meanwhile scoop the cream part out of the coconut can and whisk with a mixer until smooth and creamy kind of texture.
Spread over the cake and sprinkle with toasted coconut and serve!
