This is one of my all time favorite salad. It is easy to prepare and is so clean and fresh!!!
Put all the ingredients in a big bowl. Make the dressing by mixing 1/2 cup of olive oil with 2 tbsp of lemon juice and 2 tbsp of dijon mustard and toss it all together. Add salt and pepper to taste.
You can have fun with this salad and add on basically whatever you have in your fridge or crave. You can keep it vegetarian or add protein to it...
Toppings : cilantro, pumpkin seeds, sliced almonds, chopped chives, chopped roasted slaty peanuts…….
