My experiment today turned out to be a super delicious lunch!

A twist on Cauliflower Couscous, this is a gluten-free and even carb-free one step recipe. The kind where you throw it all into a processor, and poof!

A flavorful lunch at your service. I believe this could also serve as a wonderfully stress-free appetizer for a dinner host!

Ingredients

  • 1 cup of cauliflower florets (rinsed)
  • 1 cup a cucumber, peeled and seeds removed
  • 1 cup of spinach
  • A few basil leaves
  • 1-2 tbsp of olive oil
  • 1 tbsp of tamari (or soy sauce)
  • Juice from 1 lemon
  • Salt and pepper to taste

Directions

Place all the veggies in food processor, pulse a few times until it looks like small grains.

Add the oil, juice, tamari, and enjoy!
