Chow Mein with Shrimp

Shrimp Chow Mein

I think Asian cuisine has always appealed to me but tends to be a bit to greasy so I come up with my own version of it! Here just as fried rice, chow mein is an easy dinner to put together and ALWAYS a success!

Ingredients

  • 1 pack of brown rice noodles
  • 2 cups of cooked shrimp ( I buy frozen ones and cook them for 3-5 minutes in a pan)
  • 1 carrot, julienned
  • 1 /2 head of napa cabbage, thinly sliced
  • 1/2 an onion, thinly sliced
  • 1/4 cup of soy sauce ( I like using tamari)
  • 1 tbsp of sesame oil
  • 1-2 tbsp avocado oil

Directions

Cook the pasta according to package instructions, drain and set aside.

Heat a skillet over medium and add 1-2 tbsp of avocado oil and add the carrots, onions and cabbage and cook for 3-5 minutes. Toss in the noodles and the shrimp.

Sometimes I add leftover veggies, like broccoli, cauliflower, spinach and I also like to top it with with some roasted cashews.

If you do not like shrimp, this dish goes very well with chicken or beef, for vegetarian options just add tofu!
