"Creamy" Avocado Pesto

Makes 2 cups

This goes a long way and can transform so many dishes into something amazing. With pasta, as a spread, as a dip, on a pizza, with rice,..... so many possibilities and so easy to make!!!

Ingredients

  • 1 avocado
  • 1 cup of cilantro
  • 1 cup of italian parsley
  • 1/3 cup of grated parmesan cheese
  • 1 garlic clove, peeled
  • 1/3 cup of olive oil
  • !/2 lemon, juiced
  • Salt ad pepper

Directions

Put everything in food processor and turn it on until it is nice and smooth!!

Keep in a jar in the fridge for up to 1 week!!

Feel free to maybe add basil, kale or fresh mint, maybe some pine nuts or walnuts, play around with this recipe and you will be surprised how good it turns out with lots of different combinations!!
