My kids and husband love pasta. I used to prepare pasta dishes a lot in the past. Now I try to stick to every other week for lunch and then alternate and make it for dinner.
I like to be more conscious and choose healthy pasta such as brown rice, quinoa, whole wheat, lentils,.... I also pay attention to add tons of veggies in the sauce.

Ingredients

  • 1 package of whole wheat pasta
  • 2 eggplants
  • A few sprigs of rosemary and thyme
  • 1 jar of crushed tomatoes
  • 1 red pepper
  • 1 onion
  • 2-3 garlic cloves, minced
  • 1 pinch of red pepper flakes
  • 1 bunch of fresh basil leaves
  • 2-3 tbsp of olive oil

Directions

Peel and chop the eggplants and sprinkle with 1 tbsp of fine salt and leave them for 20 minutes.

Chop the pepper and sauté with the garlic, chili flakes, onion and 2 tbsp of olive oil. Add the eggplants, tomatoes, thyme, rosemary and basil, bring to a boil and simmer for 15 minutes.

Cook the pasta according to package.

Serve the pasta with the sauce on top and sprinkle some parmesan to taste!
