Green Mango Salad

Serves 6

Ingredients

  • 1 green chile
  • 1 garlic clove, minced
  • 1/2 cup of fresh lime juice
  • 1/4 cup of fish sauce
  • 2 tbsp of grapeseed oil
  • 2 tsp of maple syrup
  • 2 green mangoes (which means that they are not ripe), julienned. I used a mandoline
  • 1 medium shallot, minced
  • 1/2 cup of dry, roasted, unsalted peanuts
  • 1/2 cup of fresh cilantro, chopped
  • 1/2 cup of fresh mint, chopped
  • 2 tbsp black sesame seeds

Directions

Put the chile, garlic, lime juice, fish sauce, oil, maple syrup in food processor and blend until smooth.

Toss the mangoes, fresh herbs and the sauce together and put in the fridge for half an hour. Serve in a bowl and sprinkle some peanuts and sesame seeds on top.
