Makes 5 tacos

I am a huge fan of tacos and so are my kids. I had a similar dish at a restaurant a few weeks ago and have been meaning to make them at home. These turned out super yummy! I made flank steak for hubby so he could add some protein on top!

Ingredients

  • 5 corn tortillas
  • 1 bunch of kale, washed and stems removed and chopped ( I sued purple dino kale, but any kind would work here)
  • 2 cups of mushrooms, I used Shimeji, (but i shank shiitake would work nicely)
  • 1 lime juiced
  • Olive oil
  • Salt and pepper
  • 1 avocado, peeled and cut into cubes
  • Toppings: salsa, guacamole, hot sauce,....

Directions

Massage the kale in a large bowl with the lime juice, 1 tbsp of olive oil and some slat en paper. Leave it to rest fro 5 minutes while cooking the mushrooms.

Roughly chop the mushrooms and sauté them for a couple of minutes with olive oil, some salt and pepper.

Just warm up the tortillas and assemble by starting with the kale, some mushrooms and some avocado slices.

Add any toppings you feel like and even some protein such as chicken, flank steak or beans,.....
