I could live on salads all year long! I feel like a magician in my kitchen, adding a bit of nuts, cooked or raw veggies, experimenting with dressing, this is all fun for me... When someone told me that kale should be massaged, I thought it was a joke until I tried it... Nonetheless I find it satisfying to do so but it makes kale less chewy and even tastier! If you haven't done it yet I strongly recommend it to try, you will LOVE it!

Ingredients

  • 2 cups of chopped kale
  • 1 carrot, chopped
  • 1 1/2 tbsp of toasted pine nuts
  • 1/3 cup of cherry tomatoes
  • 1/4 of an avocado, cut into cubes
  • Lemon juice, from 1 lemon
  • 1-2 tbsp of olive oil
  • Grated parmesan
  • Salt and pepper

Directions

Place the kale in a large mixing bowl, add the lemon juice and start massaging it. You will hear it kind of crack, do that for just 1 to 2 minutes and let it rest while you chop and prep the rest of the ingredients.

Assemble the salad and drizzle some olive oil on top. The mix between the lemon juice that we used to massage the kale and the olive oil now makes the perfect dressing!

Add the pine nuts and freshly grated parmesan last and enjoy!
