Summer means salads. I love to mix it up and coming with new options all the time. I think here the fennel gives a fresh take on the dish and the pistachios add a nice saltiness to it! If you need something more consistent, I think that grilled chicken or salmon would go perfectly well!

Ingredients

  • 1 cup of chopped kale
  • 1 fennel, thinly sliced
  • 2-3 radishes, thinly sliced
  • 1/3 cup of cooked quinoa
  • 1/4 cup of pistachios
  • 1 lemon, juiced
  • Dressing: 1 tbsp of dijon 2 tbsp of lemon, 1 tbsp of chopped shallot, 2 tbsp of olive oil

Directions

Place the kale, fennel, radishes and quinoa in a bowl and add the juice of half a lemon. Make the dressing by putting all the ingredients in a jar and shake. Drizzle over the salad and add the pistachios and toss. You may also add some chopped apples to give a nice sweet touch! I think ricotta salata would taste delicious crumbled over as well!
