Week-Long Chicken Dinners

The best way to guarantee an easy week of cooking is to prepare in advance. This week, one fresh meal will set you up for a week-long of delicious dinners. If you know that your week will be hectic and you are not sure how to organize dinners, here is a tip that will be really helpful.

The tip: A Roasted Chicken

The possibilities when cooking with chicken are endless, but I've figured out a way to best utilize your chicken, and your time.

  • In the beginning of your week, roast a chicken. If you don't want to roast a chicken yourself, local grocery stores really do have excellent roasted chicken. One whole chicken will do, but it will be even easier on your week if you can muster up 2.
  • Once you have your chicken, cut it up into parts you need. Drumsticks, chicken breast, chicken pieces, etc.
  • Set aside the parts you'll be using for that nights dinner.
  • Set aside  the bones to make homemade chicken stock.
  • Keep the rest of the meat covered in the fridge to use for the following meals.

THE MENU

MONDAY
Fresh Roasted Chicken with Roasted Vegetables
Monday's roasted chicken dinner can be served with vegetables that are roasted in the oven just the same. Carrots, potatoes, and brussels sprouts are great options here. If you're making the chicken at home, you can pop these into the same pan the chicken is on. The vegetables will give an extra kick of flavor to the cooking meat.

TUESDAY
Chicken Tacos
Taco Tuesday! Loosen the chicken bits and coat with salt, pepper & garlic powder. Generously coat chopped cabbage and corn with squeezed lime. Top a corn tortilla with chicken, cabbage and corn. Sprinkle with cilantro if desired, and serve!
Ingredients you'll need: Corn tortillas, Cabbage, Lime.

WEDNESDAY
Pineapple Basil Chicken
While preparing this dish, pop two cups of rice on the stove. Use one cup of white or brown rice as a base to Wednesday's dinner, and keep the other half for tomorrow...
Ingredients you'll need: Pineapple, Cashews.

THURSDAY
Chicken Fried Rice
Coat a pan with olive oil and lightly fry the chicken before adding the rice and the rest of the ingredients. Toss, until ready to serve!
Ingredients you'll need: Garlic, Spring Onions, Sesame Oil, Soy Sauce.

FRIDAY
Roasted Chicken with Brussels Sprouts
Another round of roasted chicken!
To bring back the irreplaceable essence of your roasted chicken, you can pour some chicken stock in a baking dish, place the chicken on top, and reheat the chicken at 200 degrees. To create a simple side, toss whole brussels sprouts in olive oil, salt, and pepper, and roast alongside your chicken tossing occasionally.
Ingredients you'll need: Chicken Stock, Brussels Sprouts.
