Mushrooms Cups

Serves 4-6

Ingredients

  • 2 tbsp light soy sauce
  • 1 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 1/2 tsp maple syrup
  • 3 tbsp grapeseed oil
  • 2 garlic cloves, minced
  • 2 tsp of fresh ginger, minced
  • 1 shallot, chopped
  • 2 cups mushrooms, I used cremini and shiitake (feel free to try whatever you ave at home) chopped
  • 3/4 cup of water chestnut, minced
  • 10 leaves of butter lettuce (or romaine) washed and dried
  • 1/2 of cashews, chopped
  • 1/2 cup of cilantro, chopped

Directions

Combine the soy sauce, hoisin sauce, vinegar, maple syrup, salt and pepper in a bowl and mix well. Het 1 tbsp of oil in a pan, stir in the garlic and ginger for a few seconds and add the shallot, mushrooms and water chestnuts and cook for 4-5 minutes, stir in the sauce and cook for 1 more minute. Place the lettuce leaves on a plate and scoop in the mushrooms mix, add some cashews and cilantro on top.

You could add some shredded chicken if you would like some kind of protein and make it a more consistent dish.
