These are a super healthy a delicious breakfast and will make your kids super duper happy.

Ingredients

  • 3/4 cup of oats
  • 1/4 cup flour
  • 1/3 cup of coconut flakes
  • 1/2 tsp of cinnamon
  • 1/4 tsp of baking powder
  • 1/4 tsp of baking soda
  • 1 pinch of salt
  • 2 eggs
  • 2 tbsp of melted coconut oil
  • 1/2 cup of peanut butter
  • 1 tsp of vanilla
  • 1/3 cup of chocolate chips (carobs chips work as well)
  • Optional: 1/3 cup of walnuts or macadamia nuts

Directions

Preheat the oven at 350F. Line and grease a 8 inch square pan with parchment paper.

In a large bowl, whisk together all the dry ingredients.

Combine the wet ingredients in a different bowl and mix it all together with a wooden spoon.

Add the chocolate chips and walnuts last.

Pour the mixture in the prepared pan and spread it evenly and bake for 20-30 minutes until golden brown.

Let it cool on the rack for 20 minute before cutting.
