I am always trying to balance healthy and tasty desserts around here. It is not always easy because my kids will not eat it if it is too healthy. I keep trying things and experimenting and when it works, it makes me so happy. This one is kids approved!!

Ingredients

  • 1 ( 15oz) can of organic pumpkin purée
  • 2 bananas, mashed
  • 6 dates (pitted and chopped)
  • 1 tsp of vanilla extract
  • 1 cup of coconut oil
  • 2 1/2 cups of flour
  • 1 tbsp of baking powder
  • 2 tsp of cinnamon

Directions

Preheat the oven at 350F.

Toss the pitted dates with 2 tbsp of hot water and let them soften fro 5 minutes.

Combine the pumpkin, mashed bananas, coconut oil, vanilla and cinnamon in a large bowl of an electric mixer and beat well.

Add the flour and baking powder until just combined. Don't over mix it otherwise it will get tough.

Spoon the batter in a lined and greased muffin pan and bake for 20-22 minutes until toothpick come out clean.

    Can I use almond flour for this? Looks yummy!!

      You can try, I am not sure how the consistency will turn out with only almond, otherwise, I would use maybe half almond half spelt, would that work?
