Comes fall, I just crave pumpkin. I try to incorporate it in everything. On top of being delicious, it is super healthy for my family!
I make the pancakes in advance and freeze them so they are ready in no time on school days! Perfect breakfast that everyone enjoys!

Ingredients

  • 1 cup of milk ( of you choice)
  • 2 eggs
  • 1 1/2 cup of whole wheat flour
  • 2 tsp of baking powder
  • 1 cup of pumpkin puree ( NOT pie filling)
  • 1 tsp of ground cinnamon
  • 1 tbsp of maple syrup
  • 1 tsp of pumpkin pie spices ( optional but delicious)

Directions

Combine all the dry ingredients together in a bowl. Put all the wet ones in the blender and mix for a couple of seconds. Add slowly the dry ingredients to the blender ( on low speed otherwise it will go everywhere) and blend until smooth for 30 seconds.
If you do not have a blender just do everything with a whisk, result will be the same, it will just take a bit longer.
Cook the batter 1/4 cup at a time on a hot pan, 2 minutes on each side.
