Shrimp and Veggie Stir Fry, with Peanut Sauce on the side

Stir fry is often on the menu in my house as it means I get to use leftovers or whatever I have at hand or feel like and make a complete dinner that happens to be one of my kids faves!!

Ingredients

  • 2 cups of cooked rice
  • 16-20 shrimps
  • 3 cups of mixed, frozen veggies (thawed)
  • 2 tbsp of soy sauce
  • 1 tbsp of sesame oil
  • 1 tbsp of grated ginger
  • 2 garlic cloves, minced
  • For the sauce : 1/2 cup of peanut butter, 1-2 tsp of water, 1 tbsp of Mirin, 1 tbsp of maple syrup

Directions

Sauté the garlic and ginger for a few minutes with 2 tbsp of olive oil for 3-5 minutes, add the veggies and shrimps and keep on cooking gon low for another 5-7 minutes. Add the soy sauce and sesame oil and toss.

For the peanut sauce, whisk together all the ingredients until completely smooth.

Spoon some rice in a bowl, add the shrimp and veggies and drizzle with the peanut sauce on top.....
