Summer Squash Slaw

This is super fresh and the different ingredients together makes this a surprising combination of flavors. I thought my kids were gonna rebel and not eat it and they loved it!!!!

Ingredients

  • 2 Summer squash, washed and end trimmed
  • 1 cup of feta cheese, crumbled
  • 1/3 cup of toasted pine nuts
  • 2-3 tbs pof olive oil
  • 1 lemon, zested and juiced
  • 1 shallot, minced
  • A couple of fresh mint leaves, minced
  • Sal and pepper

Directions

Grate the squash into a bowl and toss with the shallot, olive oil, lemon juice and zest, some slat and pepper. Taste and adapt the seasoning.

Leave it to rest for a few minutes. Just before serving add the feta, the pine nuts and the mint.
