Goat Cheese and Summer Veggies Tartlets

These are really easy to make and a brilliant way to get the kids to eat veggies. They are perfect when you have guests over or fancy a light bite. Feel free to use different veggies and play with it a little.

Ingredients

  • 1 sheet of puff pastry (store bought, thawed)
  • 1 pack of 8oz of herbed goat cheese ( plain works great as well, you can always add fresh herbs)
  • 2 medium heriloom tomatoes
  • 1 zucchini, washed
  • 1 egg
  • Olive oil
  • Salt and pepper
  • 1 bunch of fresh basil leaves, finely chopped

Directions

Preheat the oven at 400F.

Cut the pastry sheet in 6 rectangles. Combine the soft goat cheese and egg. Spread 1 large spoonful on each rectangles. Thinly slice the tomatoes and zucchini an place on top of the cheese. Drizzle with a little bit of olive oil and some salt and pepper. Bake for 20-25 minutes.

Remove for the oven when golden brown and sprinkle the fresh basil on top. Serve with a nice leafy green salad!
