Makes 12 Bars

These are my traveling snacks. They are full of superfoods, seeds, collagen powder and fibers.... Healthy, satisfying and beautifying! My kids don't really care for these but they are my ultimate favorite!

Ingredients

  • 2 cups of dates, chopped (pits removed)
  • 1 cup of raw nuts (I used 1/4 almonds, 1/4 cashews, 1/4 sunflower, 1/4 pumpkin)
  • 1/4 chia seeds
  • 1/2 cup of flaxseeds
  • 1/4 cup shredded unsweetened coconut
  • 2 scoops of collagen powder
  • 1/3 cup of melted coconut oil

Directions

Let the dates soak in 2-3 tbsp of hot water for 5-10 minutes.

Place them in food processor with half the water and all the other ingredients. Plus until it makes a thick paste. Transfer to a square dish and press down until flat and uniform. Refrigerate for 1 hour. Cut into squares and keep in the fridge (or cool place) for up to 10 days.

    I wasn’t sure how much 2 scoops of collagen was. Could you please specify the quantity in grams or Tablespoons, or both? Also would it be ok to substitute instant dissoving Gelatin powder for the collagen?

    Which is better to use: a 9 x 9 inch or an 8 x8 inch pan?
    Thank-you so much for sharing your recipe. I would like to make it because it is easy to put together and has such delicious and nutritious ingredients.

      I used collagen protein powder just as an add on ( Vital Protein). Either any kind of protein powder works or none at all is also good. Not sure about using gelatin powder though.
      Both sizes pan work, depending on thickness that you want, obviously bigger thinner…
