Sweet Peas, Avocado and Cucumber Vichyssoise

Serves 6

I am a soup person. I think that you get so much from just one little serving and it is super easy to prepare. It is a good school lunch as well and it allows me to hide so many veggies that my children have no clue of.

Ingredients

  • 1 avocado
  • 1 cup of frozen peas, thawed
  • 1 cucumber, peeled and chopped
  • 1/2 shallot
  • 1 cup of cherry tomatoes
  • 2 tbsp of sour cream
  • 3 cups of chicken stock
  • Juice from 1 lemon
  • Salt and pepper
  • Toppings: cut cucumbers, tomatoes, pumpkin seeds, sprouts

Directions

Combine everything in a powerful blender and mix until completely smooth.

Refrigerate for 30 minutes and serve with some toppings.

I also made ricotta and lemon Naan bread on the side.  Little soldiers to maybe dip in  the soup and make it fun for the kids!!
