It is full spring weather mode her pin LA. That means that I usually start shifting recipes for more summer and lighter dishes. I still do my Monday night soup favorite but they will be more kind of cold soups and springs veggies.
Monday: Cold Pea Soup with goat cheese crostini. Monday night soup adaptation to warmer weather!!
Tuesday: Shrimp tacos with mango-pineapple salsa. Cannot get away from Tacos Tuesday, it would make my kids so sad!!!
Wednesday: Sweet and Spicy Chicken. One pot dish dinner always makes me happy.
Thursday: Grilled Salmon on a bed of Quinoa Pilaf. This will be posted as a video and on the blog on Wednesday.
Friday: Beef Stir Fry and Sesame Noodles. One of the kiddos favorite. I use ramen to make it healthier.
Saturday: Socca. Easy enough for a Saturday night and healthy enough for to enjoy it!
Sunday: Ginger Veggies Fried Rice
