Weekly Meal Plan

Happy Mother's Day to all of you mamas out there. I am sharing my weekly meal plan to help make your life easier (as it does for me), it is as if it were mother's day every week!!

Monday: Chopped Spring Veggies Soup. (New recipe alert, sharing as  I go on Monday and will post as soon as it is ready.)

Tuesday: Chicken Lettuce Cups

Wednesday: Spinach Risotto

Thursday: Balsamic Chicken with Asparagus. (Posting recipe and video on Wednesday to show you how easy it is to make, so you will be all ready for Thursday night dinner)

Friday: Poke Bowls

Saturday: Mediterranean Sea Bass and veggies. ( I will use this recipe as a base but will add cherry tomatoes, basil, olives and fresh herbs. I will update new recipe later, but this is already a good start)

Sunday: Buddha Bowls (with veggies leftovers, rice and whatever I have in the fridge. Low maintencace cooking on Sunday night!!!After all it is my day off as well, right?!) I have added a link for a selection of many different options for Buddha Bowls, just for inspiration...
