You will definitely see a shift in my meals this week, as they are more summery! The weather started to change here and so did my cooking. I like to cook with seasonal ingredients so that shows as well. Using fresh heirloom tomatoes, making pesto, fresh herbs, salads...
Monday: Salmon Tartare with Avocado Caprese. I use the same preparation for the salmon tartare as for the pokes and will serve it with the super delicious avocado Caprese (which is avocado and tomato slices, olive oil, lemon juice, drizzle of balsamic, salt and pepper). This combination makes the perfect summer dinner. I think tuna would also work well here.
Tuesday: Shrimps Tostadas. I am just gonna sauté some shrimps toss them with lime juice and zest salt and pepper and make a cabbage salad ( lime, olive oil, salt and pepper) and place on the tostadas with avocado and cilantro!
Wednesday: Zucchini Noodles al Pesto. I will post video on my YouTube Channel and the recipe on the blog that day for whoever wants to watch it and make it. I usually mix the zucchini noodles with real spaghetti for the kids so it is friendlier for them. My preparation will be zoodles only.
Thursday: Herbed Baked Salmon with butter lettuce and green beans salad. I use as a base a recipe from the barefoot contessa, but I am omitting the dill ( as I hate dill so much) and will replace it with different herbs. I will serve it with the Bouchon salad and green beans. I will share my adapted recipe as soon as I make it.
Friday: Turkey Bolognese. Bolognese is an easy out for busy days. Plus it freezes well, so I always make extra and keep it in the freezer for super busy days!!!
Saturday: Thai Chicken Basil. I have made this a lot and it is a winner with the kids they love it. Plus it is so easy to prepare and has really fresh and interesting flavors!!!
Sunday: Peanuts - veggie Noodles. This is a new one that I am testing, I thought the kids would love it, not sure yet what kind of pasta I will use and I will make sure to share if kids like it!
