Weekly Meal Plan

It is officially summer break and I am so excited about it. Usually I have more time for dinners and less running around. This is when I experiment more but I still want it easy and efficient.
Monday: Corn Soup. I have made this soup often during the summer. I might try to tweak it a bit and if I do I will post it if worth it. But this version is already super yummy!
Tuesday: Duo of Ahi Tuna. Harry has decided that we are make this together for dinner, so I will share on my Insta stories how we make this... I love cooking with my kids and I find it amazing that they are enthusiast to do so!!
Wednesday: Chicken Satay with peanut sauce and coconut rice. This is a newbie and I am really excited to make this. Stay tuned to see how it turns out.
Thursday: Shrimps summer rolls. This is perfect for a hot day, plus you can prepare it all in advance. As long as you have rice paper, raw veggies and shrimps this takes very little time to assemble... Serve it with sweet chili sauce and done!
Friday: Chicken Parmesan. This classic is one of my kids' favorite, they have been begging for it. I like that I can make extra chicken and transform it into chicken salad for the next day lunch!
Saturday: Lemon and garlic tilapia with artichokes hearts.The video of this delicious dish will be out on Wednesday so you can see for yourself how easy it is to prepare.
Sunday: Veggies and rice stir fry. Keeping it easy for Sunday night, because most of the time I do not really feel like cooking on those days...
