Weekly Meal Plan

I am about to leave for a little while for Europe but I thought I would still share my plans to help out whoever needs inspiration out there. Now that we are are in summer I tend to make more salads and grilled meats. Even if I have more time I like to take it easy and enjoy the break and be with my kids.

So here we go:

Monday: White Gazpacho with grilled shrimps  This is so fresh and perfect for an easy Monday night dinner. All it takes is to put everything in the blender and add crab, lobster or grilled shrimps.

Tuesday: Rainbow Barley Salad I haven't made this salad in a while but is says summer on a plate!

Wednesday: Fig and Prosciutto Pizza We are right in the middle of fig season, so they are amazing!!! I would maybe do a Caprese salad on the side and even serve it with some melon as well!!

Thursday: Tomato and Feta Tartlets I am not sure if I want to make a big tart or small tartlets. Small ones require a little bit more work so I might to for just 1 larger tart. An arugula and avocado salad with olive oil and balsamic vinegar is the perfect side to this dish!

Friday: Spring Soba Noodles I made these with Molly Sims the other day because I wanted to show her an easy and flavorful family dinner and she fell in love with it!! This has lots of veggies, and vegan ricotta but is still super kids friendly. It has all the nutrients to make a perfectly balanced meal!

Saturday: Chicken Lettuce Cups This is favorite around here, I might make a quick veggie fired rice as a side dish or a coconut rice, not sure yet which one but both are low maintenance! Plus I will cook extra rice for tomorrow.

Sunday: Salmon Poke Bowls Another fave in the house. Kids version is with rice and mine is with caulirice. I will see which fish I can find either at the farmers market or fish store that day so I might go for salon, tuna or albacore (same recipe for all).
