It is so hot here in LA that this week's menu will be fairly simple, sometimes grilled on the barbecue, some pasta dishes and a few salads....
Monday: Corn, Chicken Miso Soup. I know it is super hot, but this can be eaten at room temperature. I am using leftover chicken (rotisserie would work) and this yummy miso broth I buy at the supermarket. You could make your own, by poaching the chicken in water with a couple of tablespoons of miso paste.
Tuesday: Tacos and Taco Bowls. My husband is not a huge fan of tacos, but if I make it into a bowl then he eats it all. As I made chicken last night and it is on the menu for tomorrow as well, I think tilapia with lime and cilantro would be great here or even a ceviche. I have linked a recipe that I will try and use caulirice for us instead of rice.
Wednesday: Chicken with Peach and Corn Salsa. This video and recipe is full on summer, you just need to rub some spices on the chicken and make this deliciously fresh corn and peach salad.
Thursday: Veggie Sushi Rolls. Thanks a a rice cooker this is super easy to assemble. Put your kids to work, they will love it! Maybe a side of edamame and seaweed salad. These are super easy to make!!
Friday: Grilled Salmon Summer Salad. This will be similar preparation to the one I have online, I will just switch some of the veggies with cucumbers, avocado and get rid of the potatoes and olives.
Saturday: Penne Caprese. Caprese is super easy to make and so yummy with these heirloom tomatoes and cherry tomatoes in full season right now. Just prepare the salad and toss with whatever pasta you want, I think wholewheat pasta in our house will be on the menu.
Sunday: Grilled Chicken and Veggies. Sunday night grilling with the help of my husband. The chicken taste better if it marinates for a few hours, in some fresh herbs, olive oil, salt and pepper and same with some sliced veggies such as summer squash, zucchinis, eggplant and bell peppers. Maybe a drizzle of a lemony dressing once it is all cooked will compliment it all.
