This week is supposed to be super hot, so the plan is to be as little as possible in the kitchen and as much as possible by the pool of on the beach....

Monday:  Summer Chilled Pea Soup. Perfect fro a hot night, this super light and easy to prepare soup can be served with goat cheese cristina, or sprinkle some feta cheese on top. Maybe a nice salad on the side and some crudités for the kids.

Tuesday: Grilled Salmon wit tomato and avocado Salad. I do not have a recipe for this one, you can check my slow roasted salmon or simply  broil the salmon for 8 to 10 minutes and make a avocado and tomato salad with olive oil, lemon, fresh basil, some balsamic vinegar, et voilà.

Wednesday: Shrimp and Tuscan Bean Salad. My kids like salad and love shrimp, so this will be easy to make them eat it. If yours are not so fond of salads, prepare the beans and shrimps separate and serve with some sliced cucumbers and radishes.

Thursday:  Pasta with Creamy Avocado Pesto. I will make a bowl of zucchini noodles for me, because I usually stay way from spaghetti.

Friday:  Tuna Burgers and Asian Slaw. This is my favorite recipe of tuna burgers, I should post one day about it but sometimes when I find exactly dishes how I like I feel that I can link, right?

Saturday:  Balsamic Chicken and Asparagus. This takes very little time to make and is usually a winner with the entire family. Easy enough for a Saturday night.

Sunday: Fried Zucchini Blossom with Prosciutto and a Caprese salad. Sunday is the day that I don't feel like cooking, but when it comes to making zucchini blossoms, I don't mind because it is easy and it is SO delicious!!!
