Weekly Meal Plan

I don't know about you but I have a hard time this year getting back into the school rhythm. Thank goodness I have these steady meal plans to help me out and stay organized. I am curious to know what are the little things that help stay on track when kids go back to school??
Monday: Corn Gazpacho. Corn season is almost over, so I am making the most of it and enjoying every bit of sweeteness as possible!
Tuesday: Mexican Chicken for Tacos. Back to school means that we are back on track with Taco Tuesday!! Staying in the theme!
Wednesday: Salmon Tartare and wild rice. This is the weekly new recipe post, so you know how it works. Recipe and video coming out that morning with full details!!
Thursday: Turkey and zucchini Meatballs. New recipe alert here, found a great way to add veggies without kids complaining too much about it!
Friday: Steak with Vinaigrette, Peas and Asparagus. I know I get a lot of anger for sharing meat recipes. But hey what can I say, we eat everything in moderation in here and that includes meat...
Saturday: Sole Piccata. This is a super easy one, served with mash potatoes and green beans!! Sole used to be the only fish I would eat as a kid, it has a mild taste and with this sauce it is really kids friendly!
Sunday: Soba Noodles with whatever leftover veggies I have form the week!! Sunday are meant to be easy and low key, so dinner should be in that same line, right!!
