This week, 2 of my kids are going away on retreat so I am cooking for 3 only. This is the kind of week when I like to experiment new dishes because I have time. With just 1 kid at home, I do not have to run around to after school activate and sports and stuff...
Monday:1 pan chicken and roasted veggies. This is easy if you choose the veggies that need same cooking time and temperature as chicken. Usually I will do carrots, brussels sprouts and sweet potatoes. Coat it all with olive oil, salt and pepper and cook for 40 minutes at 375F.
Tuesday: Mushroom soup. Recipe is one of my fave fall dish!! So easy and super delicious.
Wednesday: Prosciutto and goat cheese pizza. Recipe and videos coming up on Wednesday at 10:00.
Thursday: Flank steak with aubergine and fennel stew. Flank steak is on the blog but aubergine and fennel stew is a new recipe that I am tring and hopefully, if any good, I will post soon!
Friday: Spaghetti Carbonara. This happens when I give my kitchen up to my husband. This is always a special request from the kids and a night off for me...
Saturday: Roasted Salmon with mixed veggies. Easy to make as I just season the fish and put it inwoven and just wait....
Sunday: Ratatouille with quinoa. I like this recipe, I just put it all in the slow cooker and let do its magic!
