Weekly Meal Plan

Here is the meal plan for this week. Make sure to check the recipe guides as I have added quite e few new dishes that I think you will like a lot!

Monday: Spinach, lemon and white bean soup.
I just cannot escape my Monday Night Soup, which is the best thing ever… Trying something new here, where I add the spinach at the last minute, just before serving so it still has a crunch to it. I will care in my instagram story as I cook and will share recipe tomorrow.

Tuesday: Chicken Paillard. A classic but a goodie. Especially when you have guests over, it easily serves a crowd. To ensure that the chicken does not dry out, I marinate it in a grainy mustard vinaigrette, that I also use for the arugula salad, so I only have to make one.Vinaigrette is 2 tbsp of grainy mustard, 2 tsp of white wine vinegar, 2 tbsp of lemon juice and 1 tsp of lemon zest, 1/2 cup of olive oil, salt and pepper... Marinate the chicken for at least 20 minutes and grill on the bbq for a couple minutes on each side... I promise to post full recipe if you need more details!

Wednesday: Slow cooker turkey chili. I am going away for 1 night, this way I can put everything in my crockpot in the morning and not have to worry about a thing.

Thursday : Tilapia with mango avocado salsa. I am really into tilapia right now, I try it in many different ways. Here the combination is amazing especially with the freshness of the mango salsa !!! Plus I can make the salsa in advance and only have to cook the fish las minute. I think that a side of cauliflower tabbouleh will be perfect with it.

Friday: Chow Mein with shrimp. This has been on the blog for a while and is one of the most popular recipe!! It is usually a winner with kids… Growing up in Belgium, there are so many asian restaurants and we would go every week with my family. So asian flavors are amongst my go to flavors when I cook…

Saturday: Korean Bbq chicken and beef with mushrooms lettuce cups. I like this because I make 1 marinade for both meats, I just have to grill them and then I can make my mushrooms lettuce cups (from the blog) to go with it and it makes a fun family style kind of meal. I use the same sauce to marinate that I made for the Korean beef bowl recipe.

Sunday : Tomato tart. Also one of the most popular one on the blog, it seems so fancy but is so simple to assemble and is so good. I adapted this from a tart that I used to eat at the Club 55 in St Tropez. When I start making this it means that summer is around the corner!!!
