1 Pan Turkey Meatballs and Veggies

Cooking it all together in the same pan creates an amazing flavor combination and plus it is super easy!
Combine the turkey, parsley, 1 shallot, fennel seeds, egg, breadcrumbs, lentils, some salt and pepper and mix it all with a fork without pressing too hard so it doe snot become too dense.
Using a small ice cream scoopers form the meatballs an place on a tray (this can be done in advance).
Heat up the olive oil in a large pan and cook the meatballs for a couple of minutes on all sides until golden brown.
Remove from the pan, and heat up 1 tsp of olive oil with remaining minced shallot and stir for a minute or 2. Add all the veggies and sauté fro 2-3 minutes. Add back the meatballs the veggie stock, cover and simmer fro 3-5 minutes until.
Enjoy on its own or serve it with rice, or quinoa, or any kind of grain you like.
