1 skillet Chicken with Mushrooms and Asparagus

1 skillet are always a good way to prepare dinner! It gets all the flavors combined and makes it easier for cleaning up! This recipe can use beef or pork or turkey if you want to mix it up. Veggies can be varied as well, you can use spinach, peas, zucchinis, and so on, options are quite vast!
Season the chicken with salt and pepper and olive oil and coat it all nicely together.
Sauté the chicken in a large skillet with 2 tbsp of olive oil for a 5-7 minutes until golden brown. Push aside and add the shallot, garlic, mushrooms and asparagus (you may need to add a bit more olive oil, as mushrooms soak everything in).
Keep on cooking for just a few minutes until asparagus are crunchy and mushrooms cooked through. Taste and adapt seasoning if you need to.
