1 Skillet Steak with Peas, Asparagus

This is great for meat lovers. The vinaigrette adds a really nice touch and pairs nicely with the veggies.
Remove the steaks from the fridge and let them at room temperature at least 30 minutes before cooking.
Coat the steaks with olive oil, some salt and pepper.
Heat up a pan and cook the steaks on each sides (depending on thickness and how you like it 4-5 minutes on each side). When steaks are cooked to your liking place them on a plate and cover with foil and leave to rest for 10-15 minutes while you make the veggies.
In same pan add some olive oil and the shallots, cook for 2-3 minutes and toss in the asparagus and peas. While they cook, assemble the vinaigrette by whisking all the ingredients together.
Plate the veggies and the sliced steak on top and drizzle with the vinaigrette.
A nice arugula salad pairs quite nicely with this dish!
