1 skillet summer chicken with corn and orzo

This is a super easy 1 skillet summer dinner and is so delicious! I have to come up with a similar recipe with fall veggies because it is so delicious that my kids have asked me to do it again a couple of times already!

Ingredients

  • 3 medium chicken breasts, cut into cutlets and seasoned
  • 3 corn ears, corn cut from the cobs
  • 1 cup of baby summer squash, cut into small cubes
  • 1 onion, chopped
  • 2 cups of orzo pasta
  • 1 tbsp Italian seasoning
  • 1 tbs of each Olive oil and ghee
  • Salt and pepper
  • 1/3 cup of fresh parsley chopped
  • Optional 2-3 tbsp of ricotta, grated cheese

Directions

Generously season the chicken with 1 tbsp of salt, 1 tbsp of pepper pepper, and the Italian seasoning. In a large pan cook the chicken with one tbsp of olive oil and 1 tbsp of ghee. Cook it for 2-3 minutes on each side until golden brown, remove onto a plate and leave to rest.
Add the chopped onion to the pan and gently scrape the chicken bits with a wooden spoon moving the onion around.
Add the orzo and keep on stirring for 1-2 minutes. Toss in the veggies and 3 cups of water or chicken broth. Bring to a boil, add the chicken back to it and simmer until pasta are cooked (check packaging instructions but should be 7-8 minutes).
Taste and adapt seasoning...

Add the parsley and you can sprinkle some  fresh ricotta to make it creamy and maybe grated cheese for extra flavor.
