1 tray bake asian chicken and veggies

This super easy dinner is one of my go to when I don't feel like cooking and need something easy and fast! I use chicken thighs that I can cut into smaller pieces so it cooks faster but feel free to use breast if you prefer, it works great as well!
Preheat the oven at 425F.
This works even better if you can take your chicken out of the fridge 30 min prior to cooking.
Combine the crushed garlic, ginger soy sauce and sesame oil together. Spread the chicken and all veggies on a baking tray and drizzle the marinade all over. Make sure to toss it well so everything is nicely coated. (If you are in a hurry, you can always cut the thighs into smaller pieces and it will cook faster.)
Cook in the oven for 20-25 minutes or until chicken is cooked through (165F internal temperature).
