I always try to figure out the fastest way to get dinner on the table without compromising taste and nutrition. The mixed veggies tray is one of my go to and it always works! I adapted this recipe from Weelicous and have been making it constantly since then.


  • 5 large carrots, peeled and cut in 2 lengthwise
  • 1 delicata squash, washed, cut in 2 lengthwise and seeds removed
  • 2 zucchini, ends trimmed and cut in 4 lengthwise
  • 1 purple onion, peeled and cut in 6
  • 1 yellow bell pepper, seeds removed and cut in 8
  • 1 red bell pepper, seeds removed and cut in 8
  • 2-3 tbsp of olive oil
  • 1-2 tbsp of maple syrup
  • 1 tbsp of fresh thyme, chopped
  • Salt and pepper


Preheat the oven at 425F. Toss the veggies and all the ingredients together and place on a baking sheet.

Cook for 35-40 minutes, tossing halfway through and serve.

These make wonderful leftovers for a salad or an omelet the next day!
