My kids love orange chicken, I have tried different ways and done my best to keep of as healthy as possible but still as tasty as the kids had in mind. I think this version came up as the one they liked he best

Ingredients

  • 1lb of chicken thighs, boneless and skinless
  • 1/3 cup of cornstarch
  • 1 tsp of salt and 1/2 tsp of pepper
  • 2 tbsp of avocado oil
  • 1/2 tsp paprika
  • 1/4 tsp chili powder
  • 1/2 cup of orange juice
  • 1/2 cup of chicken stock
  • 1 tbsp of maple syrup
  • 1 tsp of fresh rosemary, finely chopped
  • 1 tsp of fresh thyme, finely chopped
  • 1 garlic clove, minced

Directions

Cut the chicken in cubes, season with the salt and pepper, paprika and chili powder and half of the cornstarch.
Heat up the oil in a pan and cook the chicken until golden brown for 4-5 minutes. Add the garlic and fresh herbs and keep on cooking for another minute or so until all the flavors combine nicely.

Mix together the orange juice, stock, the other half of the cornstarch and maple syrup and pour over the chicken. Bring to a boil and simmer for 4-5 minutes until it thickens.
Serve with rice, caulirice and maybe broccoli or spinach.
