Apple Kohlrabi salad

  • 3 small kohlrabi, peeled and cut into matchsticks
  • 1 large apple, cored and cut into matchsticks
  • 1/4 cup finely chopped parsley, more for garnish
  • 1/4 cup of toasted nuts (I used pecans, but walnuts, almonds, cashews or even hazelnuts would work)
  • Salt and pepper
  • Vinaigrette: 1 tbsp apple cider vinegar, 1/4 cup olive oil, 1 tbsp of maple syrup, 1 tbs pof lemon juice, 1 tbsp of orange juice, salt and pepper


In a glass jar combine together the oil, vinegar, maple syrup, orange and lemon juice and salt and pepper and sake until emulsified.
In a medium bowl add the apple, kohlrabi, nuts, and parsley, and toss with the vinaigrette to coat.
Season to taste with salt and pepper, garnish with additional parsley, and serve.
