We had an amazing spring weekend that I spent outside the entire time, that was such a tease because the rain is back again..... I was so excited about spring cooking but my family is craving warming and comforting food still because of the wether... I guess we'll have to wait t Abu ginger...
Monday: Ramen and steak. This kind of dish is my kids' favorite and they never argue about eating soup when I make it. I am basing on this recipe but switching the chicken for steak.
Tuesday: DIY taco bar. This is always a win win for everyone, because I prepare a bunch of different things an everyone is happy. I want to make cilantro rice this time for a change, grilled chicken with taco seasoning, chips and guac ( of course) Mexican slaw and garlicky black beans. Tortilla on the side as well but this way, they can make a bowl, a taco or whatever they want....
Wednesday: Easy gnocchi bake. I made this recipe a few weeks ago and everyone loved it so so much that they keep asking for it. I might use the TJ cauliflower gnocchi for a change... I also always make some sort of salad on the side.
Thursday: Wild cod burgers and sweet potato fries. I haven't made that burger in a while, this is good and easy way to get the kids to eat fish.
Friday: Lasagna. I love a good lasagna, I might make it or go to Eataly, because theirs is better than mine and plus it gives me an excuse to wander the aisles and buy loads of yummy food....
Saturday: Basil shrimps with coconut rice and braised green beans. I love making shrimps they cook in 5 minutes, my coconut rice gets done in the rice cooker. As for the green beans I found a new way recently to make them where you broil them for 6-8 minutes then toss them with some sort of chili oil and done! (My friend Pamela Salam made them and I thought it was brilliant)
Sunday: Chicken Paillard. This is also a classic from the blog that I haven't made in a while. I season the chicken, grill it on each side and plate it with some arugula, avocado, tomatoes and parmesan, a drizzle of balsamic and olive oil!
