5 minutes crunchy sautée mini zucchini

I bought these deliciousness at the farmers market the otters day and was looking fro a super easy way to prepare them. I was not sure if my kids were going to like it but they totally did! I think the lemon did the trick... Net time I might even add grated parmesan on top!


  • 1 quart on mini zucchinis, washed and ends trimmed
  • 3 garlic cloves, minced
  • 2 tbsp of olive oil
  • 1 pinch of chili flakes
  • 1 small lemon juiced
  • 1/4 cup of fresh parsley, chopped
  • Flaky salt


Cut the zucchini in 2 lengthwise. Heat up the olive oil with the minced garlic and chili flakes, just until fragrant. Add the zucchinis, toss and let them cook for a couple of minutes until the brown on each side.

I like them still crunchy! When ready add the lemon juice the fresh herbs and flaky salt and enjoy! You can eat them right away or at room temperature as well.
