5 minutes roasted pepper gazpacho

I am using roasted pepper jars here which saves so much time and tastes absolutely delicious! Serve this topped with crunchy veggies, toasted pitta bread or croutons, some feta or goat cheese... Summer dinner ready in less then 10 minutes, who does not love that?!


  • 3-4 jars of roasted peppers
  • 1 medium cucumber
  • 1 small shallot
  • 2-3 tbsp of milk or your choice (I used almond milk)
  • Toppings: green onion, bell peppers, croutons or pitta bread, feta cheese, cucumber,...


Add all the ingredients ( except the toppings) in a powerful blender and turn it on until completely smooth. I like to chill it before serving, I find it that it tastes better when chilled.

When ready, pour into bowls and add any toppings you like. I love adding some raw chopped veggies, feta and croutons, it gives it a nice mix of flavor and textures.
