I know what you will say that oat bran muffins sound boring.... Well, try these and then we can talk about it.... I made them because my girlfriend and I were looking to buy some close to us.... Let's just say I don't need to buy ever again... Going to to be baking these for a long time...


  • 1 cup of oat bran
  • 1 1/2 cup of whole wheat flour
  • 1 tbsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1 1/2 tsp of cinnamon
  • 1/3 cup of coconut sugar
  • 1/4 cup of molasses
  • 1/3 cup of apple sauce
  • 2 eggs, at room temperature
  • 3/4 cup of plant based milk (I used almond)
  • 1 tbsp of vanilla extract
  • 1 tbsp of apple cider vinegar
  • 1/3 cup of melted coconut oil, at room temperature
  • 1/2 cup of walnuts


Preheat the oven at 400F, and line up a muffin tins with 10 liners that you will say with coconut oil.

In a stand up mixer, with the paddle attachment, combine and mix the eggs, sugar, molasses, apple sauce, vanilla, almond milk, apple cider vinegar until smooth.

In a medium bowl combine the flour, oat bran, baking powder and soda, salt and cinnamon. Add to the wet ingredients on medium speed. Stop when just combined and stir in the coconut oil. Don't over mix it otherwise it will make the batter tough. Add in the walnuts and scoop in the the lined muffin tins.

Bake for 15-18 minutes or until toothpick comes out clean.

I love these warm just out of the oven and for breakfast with nut butter on it.... I freeze the extras for another day, so I'll just have to reheat it in toasted oven whenever I feel like it!
