Apple cinnamon Holiday baked oats

When I feel like a warm breakfast but don't want anything too sweet I usually go for baked oats. It has the consistency of a cake and it is super easy to make since you blend the ingredients together. You can make it for 1 person as well as 4 and tweak it with what you have at hand. Since we are in the holiday season I am making a cinnamon and apple flavor with bits of pecans in there! I will spoon a dollop of greek yogurt when ready since it will create a nice contrast of textures! and I love that

Ingredients

  • 1/2 cup of oats
  • 1 egg
  • 1/4 cup of apple sauce
  • 1/2 tsp of baking soda
  • 1/2 tsp of cinnamon
  • 1 tps of vanilla extract
  • 1 pinch of salt
  • 1 tbsp of maple syrup
  • 1/3 cup of crushed pecans
  • 1/3 cup of apple bits

Directions

Preheat the oven at 350F and grease a small ramekin.

Combine everything but the apple and pecan bits in a food processor until it gets to a smooth batter consistency. Transfer to the ramekin and dad the pieces of apples and pecans.

Bake for 20 minutes or until a toothpick comes out clean.

Spoon some Greek yogurt on top and/or drizzle some nut butter and enjoy white it it is still warm!!!
