Makes 1 cake

This is like all the flavors from fall in a cake!!! Really easy to prepare and amazing with ice cream or whipped cream for dessert or even with a dollop of greek yogurt for breakfast! You can also slice it and keep it wrapped int he freezer.


  • 2 apples
  • 3 pears
  • 1 cup of ground almonds
  • 1 1/2 cup of flour ( regular, gluten free or buckwheat)
  • 1/4 tsp of cinnamon
  • 1 cup of raisins
  • 1/2 cup of sugar
  • 2 eggs
  • 2 tbsp of oil (avocado or coconut, or even melted butter)
  • 1/8 tsp of almond extract (optional but delicious)
  • 1/3 cup of almond milk
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • A handful of walnuts


Preheat the oven at 350F.

Place the ground almond, sugar, flour, cinnamon, baking soda and powder, pinch of salt in a large bowl and mix until there are no lumps.

Grate 2 apples and 1 pear.

Add the raisins to the flour mix, the grated apples, the pears and mix together well.

Mix the milk, eggs, almond extract and oil and combine it all together with the flour until smooth.

cut the 2 remaining pears into sliced and place half at the bottom of a lined greased cake pan. Pour the batter on top of pears and finish with a few more slices of pears on top.

Bake for 35 to 40 min. Leave it to cool completely on a rack remove from the pan and slice it!
