I'va always loved artichoke soup, but cleaning and prepping these is a huge pain... So here I use frozen ones, which is equally delicious and only takes 15 minutes to prepare!!
Sauté the shallot and garlic with 2 tbsp of olive for 3-4 minutes. Add the artichokes and stock, bring to a boil and let it simmer for 4-5 minutes (until the artichokes are really soft).
Transfer to a blender with tofu and peas and process until really smooth.
Serve in bowls and drizzle some lemon juice, olive oil, sprinkle some salt and add some parsley leaves on top!
