Artichokes with apple cider-maple vinaigrette

I have loved artichokes a long as I can remember. I love everything about it, the experience of peeling the leaves, dining them in dressing and savoring the heart.... It is much easier to make than most people think. In this version I only boil them who is already delicious, sometimes I do cut the in 2 and clean them completely from the inside hair and all and grill them....

Ingredients

  • 5 medium artichokes
  • 2 bay leaves
  • 2-3 garlic cloves
  • 1 tbsp of salt
  • 1 tsp of olive oil
  • Vinaigrette: 2 tbsp of Vegenaise, 2 tsp of maple syrup, 3 tsp of apple cider vinegar, 1/2 cup of olive oil, salt and pepper

Directions

Place the artichokes in a large pot and fill with water, no need to cover them completely. Add the bay leaves, garlic, salt and olive oil. Cover with a lid bring to a boil and gently cook fro 30-25 minutes or until center is really soft and you can pick easily through it with a knife.

Meanwhile make the vinaigrette y combine and whisking all the ingredients together.

When the artichokes are cooked remove from the pot and let them cool down a bit.

Just dip the leaves in the sauce and enjoy it all, especially the heart!
