Asian ground turkey and cucumber salad

This dish takes less than 10 minutes to make and tastes super delicious with rice or in lettuce cups! You can even make it ahead of time, it keeps nicely fro a few days in the fridge.
Cook the turkey with 1 tbsp of avocado oil for a couple of minute. Toss with the garlic, chili flakes and 2 tbsp of the ginger ( keep the 1/2 remaining one for the salad). Remove form the heat and add half of the lime juice and half of the soy sauce, and leave it to rest.
Whisk the remaining lime juice and soy sauce, with the 1/2 tsp of ginger and maple syrup. Toss it with the cucumber and scallions, cilantro and mint. Spoon the cucumbers on top of turkey and add some peanuts for extra crunch. Enjoy with a bowl of rice of in lettuce cups.
